Happy April. Here’s a quick round up of some fun weekend activities. This focaccia, from Dessert Person, was the most beautiful loaf I have made, probably ever. It was a same day bake so I was nervous about how much flavor I could develop, but it was amazing. The King Arthur dough enhancer along with their 10 grain flour blend really added something special. The olive oil used was a garlic infused blend from Kofinas, a local company I first picked up at our farmers market. High quality olive oil goes a long way in producing a beautifully golden and flavorful dough.
Other delicious snacks from the weekend include pho from Pho Lang Thang, in OTR. I had the vegan with tofu and mushroom, which had so much flavor. Very impressed. Erik had the beef, also delicious and rich. Can’t ever skip Vietnamese coffee so I also enjoyed that with dinner, and it didn’t disappoint. I also made a tasty early gray cookie, a recipe from Serious Eats, with an easy cookie glaze on top. Quick, easy and tasty. Can’t ask for more on a Friday night. Erik made a breakfast favorite, Shakshouka. With homemade pitas from some corn tortillas we had at home. A go to for us with pantry ingredients.
I also finished the book Wool. I received this at a gift exchange over the holidays. I’m trying to get back into reading, but haven’t been super inspired. This did draw me in, and I quickly finished this book. The ending was a bit anticlimactic so I am not eager to read the rest of the series. But it did keep me engaged and it was an interesting story.
That sums up my weekend. I am looking forward to some upcoming weddings and events. And trying out some new recipes.
